In collaboration with the Office montréalais de la gastronomie, the SAT invites you to its urban sugar shack, an extraordinary gastronomic experience conceived by Nicolas Fonseca at the restaurant of the SAT, the Foodlab.
From March 30 to April 29, 2023, discover a 3-course menu to be enjoyed under a forest installation inspired by the maple sap harvesting process. The maple syrup flowing from this real organic chandelier will complement your plates to make them more decadent. The menu developed by chef Émilie Bégin skillfully revisits the traditional flavors of the Quebec sugar shack, adding the creative touch of the Foodlab.
The participatory installation, a concept by Montreal artist Nicolas Fonseca, was produced by Goguen.Turcot. The experience will be amplified by a sound and visual environment created by multimedia artist Jules Roze.

Nicolas Fonseca is an artist and designer. He draws on his interdisciplinary background in film, digital projects and interactive installations to create participatory experiences that lie at the intersection of art and design.
Jules Roze is a multimedia artist and researcher in computer music, visual art and digital culture. He develops sensory experiences mixing spatialized sound, visual audio and light in immersive environments.
His works have been presented in many places around the world, such as the Arario Museum in Seoul, the CNRS in Paris-Saclay, the Photon Foundation in Krakow, the SAT dome in Montreal or the Mutek festival.
